4 medium potatoes, washed and cut into quarters 2 green onions sliced very thin, including the green tops 1 cup of sour cream 3 tablespoons butter salt and pepper to your taste 2 sliced cooked and crumbled bacon 1/4 cup grated cheese ( cheddar or swiss or both)
Boil the potatoes in water to cover them, cook until done. Drain and mash, add the sour cream, butter and salt and pepper, mash until they are to your liking. Mix in the green onion and bacon.
Place into a greased oven proof dish, top with the cheese and bake at 350 degrees for about 30 minutes.
