Sauce: 2 tablespoons oil 2 tablespoons salsa 1 small onion chopped 1 can of solid packed tomatoes chopped 1 pound monterey cheese cubed 1 teaspoon mexician oregano 1 pint of sour cream12 corn tortillas 1 tablespoon oilCook onion in oil until clear and tender. Add tomatoes, oregano, and salsa. Let simmer for about 15 minutes. Set aside.
Fry the tortilla in oil to soften them up. Spread with sauce and add cubed cheese on each one. Roll them up and place in a shallow baking dish. Pour remaining sauce and cheese over the the top of them, spoon sour cream over all and bake at 325 degrees for 25 minutes.
Would also be great with taco meet inside of the rolled tortilla.
