8 ounces sour cream 2 tablespoons melted butter 2 tablespoons flour 2 medium potatoes peeled and cooked until tender 1 cup fully cooked chopped ham 1/2 cup colby cheese shredded 1/2 cup cheddar cheese shredded 4 hard cooked eggs 2 tablespoons chopped onion 2 tablespoons chopped parsley
In a large bowl stir together the sour cream, melted butter and flour. Finely chop the potatoes ( you should have about 2 cups). Add this to the sour cream along with the rest of the ingredients, toss until all combined. Pour into an 8x8 baking dish. Bake at 350 degrees for about 30 minutes or until bubbly.
