4 slices canadian bacon 3 tablespoons olive oil 2 tablespoons balsamic vinegar 1/2 teaspoon dijon mustard salt and pepper to taste 8 cups spinach leaves washed and rinsed 2 cups cherry tomatoes cut in half 4 hard boiled eggs 1/2 cup flat leaf parsley chopped
Cook the bacon until golden brown. Cut into strips.
Ina small bowl whisk together, oil, vinegar, mustard, salt and pepper.
Put spinach in a large bowl. Add dressing and toss to coat.
Top with the tomatoes, eggs and bacon. Sprinkle parsley on top.
Serve.
