3 cups four salt to taste 4 eggs 1/2 cup water or more if needed 1/8 cup butter
Mix flour and salt into a bowl.
Add eggs and 1/4 water. Mix well. Add more water to make the dough slightly sticky, yet leaving it stiff and elastic.
Using the spaztle machine press the noodles into a large pot of boiling water. Cook noodles until they float to the top. (If you do not have the machine you can press the dough through a slotted spoon, or a colander.)
Lift noodles out, and place in colander and rinse with warm water. Make sure they drain well.
At this point you can place into a pan with melted butter and fry until golden brown.
These are serves with most german meals. They are great alone but are great with any gravy.

SpƤtzle is a German egg noodle pasta with a chewy, dumpling-like texture. The short noodles are usually irregularly shaped and made from a simple batter of eggs mixed with flour (all-purpose or semolina) and milk or water.

Spaetzle taste similar to egg noodles, with the chewiness of a dumpling. We love to serve them with Rouladen and Red Cabbage. The ingredients for making spaetzle are very basic and chances are you already have them at home; flour, salt, nutmeg, eggs, and milk.
