1 1/2 cups flour 2/3 cup sugar 1/2 cup yellow corn meal 1 tablespoon baking powder 1/2 teaspoon salt 1 1/4 cups milk 2 large eggs lightly beaten 1/3 cup vegetable oil 2 tablespoons butter melted
preheat oven to 350. Grease or line 20 muffin tins with liners.
Mix together all dry ingredients in a medium bowl.
Combine wet ingredients in small bowl, mix well, Add to dry ingredients. Stir only until mixed. Pour into prepared muffin tins.
Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
Cool on wore rack.
May also be poured into a 9 x 9 greased cake pan and baked for 35 minutes or until a tooth pick inserted in the center comes out clean.
