2 pounds of baking potatoes 1 teaspoon olive oil 1 clove minced garlic 1 teaspoon salt pepper if you like
Heat the oven to 450 degrees. Line a cookie sheet with aluminum foil. Spay the foil with cooking spray or run lightly with some olive oil.
Scrub the potatoes and slice into 1 inch slices.
Mix the remaining items in a large bowl and add the potatoes and toss until all potatoes are coated.
Spread the potatoes on the cookie sheet, and bake them for 40 to 45 minutes. They will need to be turned over half way thru the baking time.
