1 large chopped sweet onion 1 tablespoon cooking oil 2 cups Pulled Pork Master Recipe (in crock pot section) 1/2 cup apricot spreadable fruit 1/2 cup bottled hot-style barbecue sauce 2 tablespoons snipped dried apricots 4 hoagie rolls, split and toasted
n a large skillet, cook onion in hot oil over medium heat about 4 minutes or until tender. Stir in shredded pork, spreadable fruit, barbecue sauce, and dried apricots. Bring to boiling; reduce heat. Simmer, uncovered, about 5 minutes or until desired consistency, stirring occasionally.
Divide meat mixture evenly among hoagie rolls.
