4 medium potatoes 1 teaspoon salt 3 tablespoons melted butter 3 tablespoons chopped herbs ( parsley, chives, thyme or what ever your taste is) 4 tablespoons grated cheddar cheese 1 1/2 tablespoon parmesan cheese
Peel the potatoes if the skin is tough, otherwise just scrub and rinse them.
Slice the potatoes into thin slices (BUT DO NOT SLICE ALL THE WAY THRU THE POTATO). They should fan open.
Put the potatoes in a baking dish and fan them out. Sprinkle with salt and drizzle with butter, then sprinkle on your herbs of choice.
Bake them for 50 minutes at 425 degrees. Remove from oven and sprinkle with cheeses. Bake for another 10 to 15 minutes or until slightly browed and they are soft in the center.
