3 pounds chicken, cut into pieces 1/2 cup white vinegar 1/4 cup water4 garlic cloves, mashed 5 bay leaves 1 teaspoon peppercorn 1/4 cup soy sauce dash of pepper
For more sauce, double the liquid.
May use 1 lb. pork, cut into 2 inch pieces (cooking time may take longer for pork to be tender).
Place chicken pieces in a pot, rinse and drain. Sprinkle the vinegar over the chicken pieces and add the water. Add garlic, bay leaves, peppercorn and a dash of pepper. Cover pot and boil contents together for 20 minutes or until chicken pieces are cooked. Add soy sauce (use half at a time to taste, also it is easier to add less than to take away) over the meat, stir and cook for about 5 more minutes. Taste and serve over steamed rice.
