1/2 pound boneless chicken breasts, cut into 1/2 inch cubes 1 cup forest mushrooms (soaked, drained and sliced) 1/2 cup bamboo shoots, sliced 4 eggs 2 green onions, sliced diagonally into 2 inch lengths 6 cups cooked medium grain rice
Sauce: 1/4 cup soy sauce 1 cup soup stock or chicken broth 1/4 cup Kikkoman aji-mirin 2 tablespoons sugar
Garnish: peas or shredded seaweed
Preparation: Heat sauce in medium pan and add chicken, mushrooms and bamboo shoots. Bring to a boil, then simmer 3 minutes. Bring to a boil again, stir eggs in gently until cooked. Add green onions. Divide cooked rice into 4 large bowls. Spoon sauce and ingredients over rice. Garnish.
