8 ounces dried flat rice noodles 3 tablespoons oil 1 clove garlic, minced 1 egg 1/4 cup water (may need more if noodles are dry) 4 tablespoons fish sauce 2 tablespoons sugar 1 tablespoon rice vinegar oyster/soy sauce for flavor 1/2 teaspoon red pepper flakes, crushed 1-2 green onion, cut into 1" pieces 1 cup bean sprouts 1/4 cup ground roasted peanuts lime wedges
Preparation: Soak rice noodles in warm water until soft, drain. Heat a frying pan until hot and add oil. Add garlic and brown slightly. Add egg and scramble until done. Reduce temperature if necessary. Add rice noodles to egg mixture. Turn temperature up and stir fry noodles until translucent, adding some water if needed. When noodles start to stick, add fish sauce, sugar, pepper flakes, rice vinegar, oyster/soy sauce and green onions. Continue to cook mixture until dry. Garnish with bean sprouts, peanuts and lime.
Suggestions: Other ingredients such as fried tofu, prawns, chicken, etc. may be added.
