1 cup all-purpose flour Pinch of salt 1 tablespoon canola oil 1 whole egg plus 1 egg yolk, beaten together 1 5-ounce can evaporated milk 1 pound cooking apples 2 to 3 tablespoons lemon juice Generous amount of sugar Cinnamon to taste 1 cup butter or oil, (may mix the two together) In a medium bowl, sift flour & salt together. Add oil and eggs. With a spoon mix flour into oil and eggs; adding milk gradually. Beat well. Place in refrigerator for about 30 minutes. Peel and core apples. Slice into rings about 1/4-inch thick or a little larger. Place apples on a pan and pour lemon juice over top, toss to cover all. Sprinkle generously with sugar and cinnamon to taste. Dip apples into batter and fry in hot butter or oil, until golden brown. Drain well & serve hot. Sprinkle with additional cinnamon if desired.
