Sift together: 1 1/2 cups flour 1 teaspoon baking powder 1/2 teaspoon salt
Cream together: 1 stick butter 3/4 cup sugar 1 egg 1 teaspoon vanilla
Mix flour mixture with butter mixture and refrigerate for 1 hour. Roll out to about 1/4 inch thick and place on pizza pan. Bake T 350 degrees for 1O minutes. Let cool.
Glaze 1/2 cup sugar salt 2 tablespoons cornstarch 1/2 cup orange juice 2 tablespoons lemon juice 1/4 cup water
Mix all together into a small sauce pan and cook about 4 minutes until it thickens.
Filling: Mix together 8 ounces of softened cream cheese, 8 ounces of whipped topping and 1 teaspoon vanilla. Spread this onto your cooled cookie crust, leave about 1/4 inch crust on the outside of the pizza.
Arrange fruit of choice on pizza. Strawberries cut in half, blueberries, crushed drained pineapple, sliced grapes, peach slices, plus the choice is endless and up to you.
Use a pastry brush and paint the glaze over the fruit.
Can be made the day before, cut pizza with pizza cutter and serve.
