Boil one pound of sweet potatoes, leaving skin on for 50 minutes, or until done.
Run cold water over the potato and remove the skin.
Break apart sweet potatoes and place into a bowl.
Add 1/2 softened butter and mix well with a mixer.
Add 1 cup sugar, 1/2 cup milk, 2 eggs, 1/2 teaspoon nutmeg, 1/2 teaspoon cinnamon and 1 teaspoon vanilla.
Beat on medium speed until smooth.
Pour filling into an uncooked 9 inch pie crust, and bake at 350 for 60 minutes.
When the pie has puffed up like a souffle, its time to take it out of the oven.
It will sink down as it cools.
Cool before you serve.
