4 eggs 3/4 cup sugar 2 tablespoons flour 2-1/2 teaspoons baking powder 1 cup almonds
Filling: 2 tablespoons soft butter 1 cup powdered sugar 2 tablespoons apricot jam 1 tablespoon Amaretto
Topping: 1 cup whipping cream 1 teaspoon sugar 1 tablespoon Amaretto or almond liqueur Sliced almonds for garnish
Preheat oven to 350 degrees.
In a blender, whirl eggs and sugar until well mixed. Add flour, baking powder and almonds. Blend at high speed for a few seconds. Pour into two 8' round pans, lined with waxed paper or parchment.
Bake for 20 minutes or until test comes out clean.
For filling, cream butter and powdered sugar, add apricot jam and Amaretto and spread between cooled layers. Whip cream with sugar and Amaretto; spread over top and sides of torte. Decorate with sliced almonds or serve with fresh fruit.
