Use fresh spinach, be sure to take stems out of spinach and clean well, as spinach can be sandy. Red onion thinly sliced Toss together.
HOT BACON DRESSING: 1/2 pound bacon, cooked & crumbled 1 cup salad oil 1/2 cup vinegar, use red wine or other as you like 1 teaspoon salt 1 teaspoon sugar 1/4 teaspoon pepper Garlic
Cook all together in a small saucepan, serve over a bowl of spinach.
