3 pound ready to cook corned beef brisket 29 ounce can of peaches or apricots 1/4 cup packed brown sugar 1/4 cup ketchup 2 tablespoons vinegar 2 tablespoons prepared mustard
Place corned beef in 4 quart casserole dish. Add water to cover and seasonings from brisket package. Add 1 bay leaf. Cook covered at medium for 1 1/2 hours Until tender, turning brisket over once. Let cool in cooking liquid for 10 minutes.
Slice brisket across the grain. Arrange slices in oblong baking dish.
Drain peaches/apricots reserve 1/4 cup of the syrup. Mix syrup, brown sugar, ketchup, vinegar and mustard, pour over meat and peaches/apricots. Cook covered in microwave at medium for 15 minutes. Spoon sauce over the meat and serve. Enjoy!!
